Serve on the half shell with lemon, or grill and steam until the edges curl. Shuck just before serving and keep the pack chilled until then. The shells hold their shape on a plate, so they can be opened in advance and set out on ice. Work over a bowl to catch the brine and spoon it back over the meat.
